Classic Summer Pasta Salad Recipe

This may be my husband’s favorite holiday side that I make. Even my little Juliana (AKA the world’s pickiest eater) loves it! I usually make this for all of the summer holidays and I also love to bring it as a side to a summer cookout to share with friends. I am always asked for the recipe, and I’m usually embarrassed to admit how easy it is! I hope you enjoy it!

Classic Summer Pasta Salad

Ingredients:

1 lb Rotini

1 cup grape or cherry tomatoes, quartered

1/2 cup diced orange pepper

1/2 cup diced yellow pepper

1/3 cup diced red onion

3/4 cup broccoli chopped into fine pieces

1/2 cup sliced black olives (one small can)

1 cup mozzarella pearls

1 cup Olive Garden dressing (this is where the magic happens!)

1/3 cup grated Parmesan cheese

3 Tablespoons chopped fresh parsley

1/2 teaspoon Italian seasoning

Salt & pepper to taste

Instructions:

Boil pasta to al dente package directions (do not overcook)

Once cooked, drain and rise with cold water. Set aside.

While pasta is cooking, chop vegetables and add all ingredients to large bowl.

Season with a sprinkle of salt & pepper to taste and mix well.

Refrigerate for at least 2 hours or overnight.

I add 1/4 cup dressing and 1/4 cup parmesan cheese before serving (if refrigerated overnight).
